Explain the difference between UHT and pasteurisation?
The ultra- high temperature and the standard pasteurisation process vary in the heating process. The standard pasteurisation process heats milk at around 75° C for 30 minutes and requires refrigeration, whilst the UHT heats up milk at 154° C and does not require refrigeration, and it also has a higher shelf life.
